It begins as barley. One farm. One harvest a year. Cut at dawn and malted within the week, while the sun is still in it.

II · The stills

Copper does the talking.

Two stills, raised in 1974 and never replaced. The curve of the neck decides a spirit's character — ours runs slow, and speaks softly.

III · The filling

Clear as rain, for the last time.

New-make spirit meets charred oak at 63.5%. It will not see daylight again for eighteen years.

IV · The sleep

Eighteen years of weather.

The warehouse breathes — summer swells the oak, winter draws it back. Two percent leaves the casks each year. The angels take their share; we forgive them.

V · The liquid

What time tastes like.

One sphere. Two fingers. No hurry.

Ice carved slow enough to melt slower. The first pour is for the nose; the second is yours.

4,200 bottles a year. Numbered by hand, sold by allocation, argued over at will.
